I’m sure there is a better name for these. I make these peanut butter oatmeal chocolate chips balls and keep them in my fridge for snacking or for after school car pick ups. They are simple to throw together and I think they get better as they firm up in the fridge. You won”t each just one!

Can I make this the night before?

Yes, protein balls last for about a week in the fridge. I enjoy them firm and cold, so I try to make them a few hours before serving.

Can I skip the flaxseed?

You can skip the ground flaxseed. Honestly though the taste is not altered and my kids enjoy them so I would give it a try due to all its health benefits. You can find it any most grocery stores now. I buy Bob’s Red Mill brand.

Protein Balls

The best after school snack
Servings: 6
Prep Time: 20 minutes

Ingredients 

  • 1 cup old fashioned oats
  • 1/2 cup mini chocolate chips
  • 1/3 cup honey
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1 tsp. vanilla extract

Instructions

  • Line a baking sheet with parchment paper. In a medium sized glass bowl combine ingredients. With a large spoon or your hands, mix until fully combined. Scoop a tablespoon amount of the mixture into your hand and roll.
  • Place finished ball on baking sheet. Once all are combined let set in the refrigerator for at least an hour-more is ok. Store in glass container until ready to eat.

Katie’s Tips:
*Swap another butter for peanut allergies.
*Skip flax seed if you don’t have any.
*Use vanilla paste as a punch of flavor instead of the vanilla extract. Or, the inside of a real vanilla bean.
*Omit chocolate chips or try using peanut butter chips or dark chocolate chunks.
