Line a baking sheet with parchment paper. In a medium sized glass bowl combine ingredients. With a large spoon or your hands, mix until fully combined. Scoop a tablespoon amount of the mixture into your hand and roll.
Place finished ball on baking sheet. Once all are combined let set in the refrigerator for at least an hour-more is ok. Store in glass container until ready to eat.

Katie's Tips:*Swap another butter for peanut allergies.*Skip flax seed if you don't have any.*Use vanilla paste as a punch of flavor instead of the vanilla extract. Or, the inside of a real vanilla bean.*Omit chocolate chips or try using peanut butter chips or dark chocolate chunks.
