My sister, Jenny, is a sensational baker. She is best known for her chocolate chip cookies called “Big Jenny’s Cookies.” While baking has always felt to me like an Achilles heel, I have begun to submit to the idea that precision, patience, and rule following can actually pay off into something tasty, repeatable, and lovey. My baking wheelhouse is pies and crisps where you can alter ingredients a bit and it still turns out amazing. This brownie recipe is my sister’s go to recipe. So, I am confident it will turn out perfect if you follow the directions below! I add chocolate chunks to the top of the batter as a fun add-on.

This brownie is more gooey than cake-like. My kids like it served warm with vanilla ice cream on top.

Yes, cover the pan with foil and leave it in the refrigerator.

Why melted butter?

Turns out melted butter is best for fudgy brownies. The melted butter minimizes air in the batter. I melt butter in a glass bowl in the microwave for one minute. I like to cut the butter into 2 tablespoon chunks to help it melt evenly and quickly. Your microwave may be different, so begin with 45 seconds and add more time if needed.

Mind-blowing Brownies

Chocolatey, warm brownies just calling for a scoop of vanilla

Ingredients 

  • 3 cups white sugar
  • 1 cup butter, melted
  • 1 Tbsp. vanilla extract
  • 4 eggs
  • 1 1/2 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 tsp. salt
  • 1 1/2 cup semi-sweet chocolate chips, divided

Instructions

  • Preheat the oven to 350 degrees. Spray a 9 by 13 pan with nonstick cooking spray.
  • Combine sugar, melted butter, and vanilla in a large bowl. Beat in eggs one at a time, mixing after each addition.
  • Combine flour, cocoa powder, and salt in a separate bowl. Gradually add flour mixture into egg mixture until blended. Stir in chocolate chips. Pour batter into the pan. Sprinkle chocolate chips evenly over the top.
  • Bake in the oven for 35-40 minutes. Let cool and slice.

*I use Ghirardelli premium baking 100% cocoa powder.
*Be sure to let butter cool a bit before adding eggs to the butter and sugar mixture. You don’t want the eggs to scramble!
*Try adding frosting and fun holiday sprinkles for a festive brownie.
