I grew up having parties at my house for different sports teams. My mom would make a few servings of this to feed a large group of hungry kids. This one dish non-fussy dessert can be made for family gatherings, especially ones that are thrown together last minute. With little prep time and using several of my pantry staples, it’s nice to have a homemade dessert that guests devour.

Can I make this in advance?
This keeps well in the fridge. In fact, it even gets better. I sneak bites of this all week when I have leftovers!
What if I can’t find frech vanilla instant pudding?
French vanilla is best. But if the store is out, vanilla is fine. Also, if you like this dessert, buy several french vanilla a the store to have on hand in your pantry.
Chocolate Eclair Dessert

Ingredients
- 2 pkg. French vanilla instant pudding
- 1 8z. container cool whip, softened
- 3 cups cold milk
- 24 graham crackers
- 1 16 oz. chocolate frosting, such as Pillsbury
Instructions
- Combine the pudding and milk in a large bowl. Whisk for about 2 minutes until thick. Fold in softened cool ship until smooth using a spatula. Layer the bottom of a 9 by 13 pan with graham crackers. Pour in half of the pudding mixture even on top. Lay another layer of graham crackers. Pour the remaining pudding mixture on top. Finish with one more layer of graham crackers.
- Evenly spread the chocolate frosting over the graham crackers until dessert is fully covered. Put in the refrigerator and allow to chill. Ideally made a day in advance.

Katie’s Tips:
*This dessert gets better as it sits so make a day in advance if you have time.
*The cool whip will soften if left on the counter for 30 minutes.
*You may have to break a few of the graham crackers to make them fit into the pan. You will not notice once the dessert is frosted and served.
