This may be my favorite cocktail. It is a light summery drink made with Aperol, an Italian Aperitif with a blood orange color. I love drinking this before a meal. It is beautiful and doesn’t leave you too full or tipsy! And, for my 40-year-old brain, I enjoy this because of the 3-2-1 recipe. So easy to remember!

Aperol is a bright orange Italian liqueur. It is famously served as a light and airy pre meal cocktail. With its lower alcohol content, it’s a popular afternoon cocktail or pre dinner treat.

I use prosecco, Aperol, Topo Chico for the fizz, and an orange slice.

You never know where a cork will wind up when I’m opening Prosecco. Watch out!

Where do I find Aperol?

Any liquor store should have Aperol.

Can I make this ahead of time?

I assemble this right before serving because then the prosecco is fizzy, and the Topo is fresh. It is simple to assemble right in front of your guests. The vibrant orange color makes it so appealing.

Aperol Spritz

Prep Time: 15 minutes

Ingredients 

  • 3 parts prosecco
  • 2 parts aperol
  • 1 part club soda (I use Topo Chico)
  • 1 slice orange

Instructions

  • Directions: Place ice in a wide wine glass. Pour 3 parts prosecco, 2 parts Aperol, and one part club soda. Garnish with an orange slice. Serve cold. I eyeball the measurements and make one drink at a time.

Katie’s Tips:
*Invest in a large ice block container for cocktails! One large ice cube looks cool and keeps your cocktail nice and cold.
*You can use champagne if you don’t have prosecco.
